Ruby’s Adding Fast Casual Service

Prepared menu items and freestanding locations part of expansion plans

California-based Ruby Restaurant Group is introducing fast casual service to its Ruby’s Diner concept this fall. “Ruby’s is branching out into the quick-service world,” Scott McIntosh, vp, operations, told QSR Magazine. “We’re going to be there, and we’re going be strong.”

Over the years, Ruby’s has experimented with airport kiosks and carhops and expanded its menu to include vegetarian and low-fat options. It introduced upscale The Beachcomber Café in 2006, and owns the Crystal Cove Shake Shack, a quick serve in Newport Beach, Calif.

QSR reports that most of the 15 Ruby’s mall locations will be back-fitted with grab-and-go cases. Freestanding restaurants will hit the market this fall, starting in Orange County, Calif.
