Seattle-based Baristas Coffee Co. Inc. has developed a franchise agreement with Baristas Texas, an affiliate of consulting boutique Jag Capital (San Antonio, Texas), to begin opening espresso stands in Texas.

The agreement includes opening 10 locations over the next three years with an option for 20 additional locations within the territory over the next eight years. Locations include such cities as Houston, Austin, San Antonio, San Marcos, and New Braunfels, with the first Texas location expected to open later this month.

“I have worked with Jag Capital in a number of prior businesses over the past 15 years, and I have complete confidence in their ability to provide not only the capital required for the expansion but the management acumen to deploy a solid foothold in the San Antonio and other regions in Texas” says veteran restaurant executive Thomas Metzger, Baristas coo.

Metzger, who has served as ceo/president/coo for numerous restaurants including Wolfgang Puck, Sizzler Steakhouses, Boston Market and Kenny Rogers Roasters, says he’s focusing on expanding the Baristas business model and brand throughout North America.
