A trio of restaurant chains have recently announced expansion plans and/or eatery openings. They are:

* Broken Yolk (San Diego), a breakfast and brunch concept, which will open four cafes in the Dallas-Fort Worth market developed by franchisees JP Wu and John Zhang. The deal includes the purchase of an existing restaurant in McKinney, Texas. In all, Broken Yolk has 41 cafes in five states.

* Shake Shack (New York), which plans its first restaurant in Hawaii, on the island of Oahu. Slated to debut in 2027, the eatery is being developed by Honolulu-based Union MAK Corp. Founded in 2004 in New York, Shake Shack has grown to 625-plus locations in the U.S. and overseas.

* Sweetgreen (Los Angeles), which is opening its first two restaurants in Arizona. The first of those has just opened in Scottsdale, while the second is slated to debut in late October in Phoenix. The fast-and-fresh chain has more than 250 restaurants across the U.S.
