Seafood Restaurant Set for Wynn Las Vegas

Celeb chef’s coastal concept will overlook resort’s Lake of Dreams

Early next year, Fiola Mare will join the fine-dining lineup at the luxury Wynn Las Vegas resort. The brainchild of James Beard- and Michelin-awarded chef and restaurateur Fabio Trabocchi, the seafood restaurant will take over a space being vacated later this month by Lakeside.

“Since moving to the U.S. in 2000 from Le Marche, Italy, I’ve dreamt of having a restaurant in Las Vegas,” says Trabocchi. “I couldn’t be prouder than to partner with an iconic destination as Wynn Las Vegas, which is the perfect complement to our hospitality group.”

Fiola Mare’s menu will feature seafood, sourced from the Mediterranean and East and West Coast of the U.S. Like its sister restaurant of the same name in Washington, D.C., the Las Vegas location will feature a raw bar at its entrance, as well as seafood “towers” and an array of tableside services.

As for the restaurant’s design, backers say Fiola Mare will celebrate the abundance of the sea, with opulent finishes and bespoke maritime-inspired design elements. New custom furnishings, influenced by classic French and Italian designs from the 1940s and 1950s, will maximize views of the complex’s adjoining Lake of Dreams.

Wynn and Encore Las Vegas consist of two luxury hotel towers with a total of 4748 hotel rooms, suites and villas. The resort also features approximately 194,000 square feet of casino space, 20 signature dining experiences, 14 bars, two spas, 174,000 square feet of retail space, two showrooms, two nightclubs, a beach club, recreation and leisure facilities, including an 18-hole golf course, and roughly 513,000 square feet of meeting/convention space.
